French Toast

Colette and I had a French Toast cook off recently.  It all started when she came up with a wonderful pumpkin recipe that she made up off the top of her head.  (She does that a lot).  All was fine in the kitchen until she challenged me to see if I create something better.  So I did, in my opinion.  Make each of the French Toast recipes below and let us know which one you like better.

Colette’s Pumpkin French Toast:

    • Slices of bread made from our Gluten Free Bread Mix
    • 1/2 a 15 oz can of packed pumpkin
    • 1 – 1.5 teaspoons of Cinnamon
    • dash of nutmeg
    • 3 eggs
    • 1/3 cup of coconut milk (or whatever milk you desire)
    • Thoroughly mix the pumpkin, cinnamon, nutmeg, eggs and coconut milk in a shallow bowl.

     

 

 

Directions:

Take a slice of bread and place it in the bowl, making sure that the “batter” thoroughly covers the bread. This is a somewhat thick batter. Just coat the bread well and place on the griddle.
Cook the bread like any other piece of French Toast.
Repeat until you are out of batter

 

Frank’s Banana French Toast:

 

  • Slices of bread made from our Gluten Free Bread Mix
  • One very ripe banana (the riper the better) – mashed to the point of puree
  • 1 – 1.5 teaspoons of Cinnamon
  • 1/4 teaspoon nutmeg
  • 3 eggs
  • 1/3 cup of Goat milk kefir (or whatever milk you desire)
  • Thoroughly mix the banana, cinnamon, nutmeg, eggs and goat milk in a shallow bowl.

 

 

Directions:

  • Take a slice of bread and place it in the bowl, making sure that the “batter” thoroughly covers the bread
  • Wait 20 seconds to give the bread some time to soak up the batter
  • Cook the soaked bread like any other piece of French Toast
  • While you are cooking one slice of bread, allow the next one to soak in the batter
  • Repeat until you are out of batter
