Makes 20-24 Three-Inch Pancakes
Our gluten free and grain free pancakes are light and fluffy. We give you ideas of what you can add to the mix to make it even more yummy! You will end up with deep, golden brown waffles that are light and airy in texture. Yum!
Ingredients: Chickpea Flour, Potato Starch Flour, Tapioca Flour, Cane Sugar, Ground Flax Seed, Baking Powder, Baking Soda, and Sea Salt
Directions: Add 2 eggs and 6 T of olive oil to mix. Add in 2/3 cup of milk or milk alternative using a little at a time to reach desired consistency. Add in other ingredients of your choice (blueberries, bananas, chocolate chips, etc.) and mix. Drop the batter by spoonfuls onto the griddle and cook.
Vegan Option: We recommend substituting a product call “Ener-G” for the eggs. We have tested and used this product with great success!
